Say hello to your new favorite chocolate, chewy, gooey, fudgy, delicious, natural, vegan double chocolate brownie cookies!
I have been loving not only these cookies, but ALL cookies lately. I do not discriminate. I love cookies. I love being pregnant and eating cookies! I love Blackstrap Molasses Cookies, Peanut Butter & Oat Carob Chip Cookies, Chewy Date Cookies, and of course, these Double Chocolate Brownie Cookies.
I call them brownie cookies because I absolutely love to make this recipe and make big cookies- no bite sized portions here- with this recipe you go for the extra-large, extra-thick cookies AKA- brownie cookies.
Agh. Brownies were seriously my favorite dessert when I was young, Besides sweet potato pound cake which is weird because what kid likes a dessert with sweet potato in it?! You know what is even weird-er?! I hated chocolate as a kid. I’m not lying. I refused to eat chocolate candy, chocolate chip cookies, chocolate ice cream, you name it- if chocolate was in the name, I didn’t eat it!
Except for brownies. I loved brownies. Always have, always will. But seriously, they are sooooo chocolatey so how did I like them and none else?! All I know is that they had to be a certain brand (can’t remember which one) and they had to be cooked only halfway through to where they were still extremely gooey. Kind of like these cookies.
Anyways, enough about weird childhood obsessions. Back to brownie cookies. This recipe is Vegan, Gluten-Free, and delicious. These cookies make the perfect snack, treat, or dessert and will NOT leave you with a sugar high, but will leave you feeling satiated and balanced. They are made with all natural ingredients and tested multiple times to where the least amount of oil and sugar is added to make them absolutely delicious!
A Gluten-Free, Vegan treat for any time of day!
- 1/4 cup nut butter of choice *I have used peanut and almond butter and love them both!
- 1/4 cup coconut sugar
- 1 tbsp coconut oil
- 2 tbsp unsweetened almond milk
- 1/4 cup pure unsweetened cocoa powder *I used Hershey's
- 1 tsp pure vanilla extract
- 1 flax egg *1 tbsp ground flax + 2 tbsp water mixed well
- 1/2 cup gluten-free all-purpose flour
- 1/4 cup Vegan mini chocolate chips
Preheat oven to 325F.
In a large bowl, mix together the nut butter, coconut sugar, coconut oil, and almond milk.
Add in cocoa powder and mix well.
Stir in vanilla and flax egg.
Fold in flour and mix until no chunks remain. Add in chocolate chips *save some for topping cookies if desired.
Roll into 8 large balls and lightly flatten onto a cookie sheet. Bake for 8 minutes. Let cool and enjoy the gooeyness!
