Yes. It’s that time. Time to put together some delicious recipes from fresh, Summer produce! How do  simple, easy, creamy hummus & veggie roll ups sound?!

I am so excited that the warm weather has arrived! When I think of Summer, I think of citrus fruits, fresh berries, fresh herbs, veggies, and quick & easy food that you can take to the beach or on picnics!

This past weekend, at the Durham Farmer’s Market, I had the great opportunity to spread ideas of how to incorporate fresh, Summer produce into our diets! Many of us may go to the farmer’s market, or even buy some veggies or herbs at the store, and find them rotten in the fridge 2 weeks later. You may have had every intention to make them, but was not really sure what to do!

This recipe is extremely quick & easy to make. It is kid friendly, and can be packed in a lunch, eaten at home, or chopped into bite-sized samples for Summer BBQ’s or get togethers!

One of the best things about this simple recipe is that it gives you the opportunity to share a healthy lifestyle with others. Sharing simple and healthy, yet delicious recipes can help others with ideas and inspiration for their own recipes!

I really enjoyed sharing the recipe and samples of Hummus & Veggie Roll Ups at the Durham Farmer’s Market and helping to spread ideas of how to use fresh, Summer produce. The possibilities are endless with this recipe too. Fresh herbs, hummus, avocado, veggies, and sprouts from your local farmer’s market can create some of the best flavors! No need for cooking either. Just chop away- you can even add them onto crackers for an extra crunch!

A simple and tasty recipe that is a great way to use fresh, Summer produce! 

Course: Appetizer, Main Course, Snack
Servings: 1
  • 1 whole grain tortilla
  • 2 tbsp hummus of choice
  • 1 tbsp chopped cucumber
  • 1 tbsp chopped tomatoes
  • 1 tbsp chopped spinach
  • 1 handful sprouts
  • Any other spreads, herbs, or veggies!
  1. Lay tortilla out onto a flat surface. 

  2. Spread hummus across one side of the tortilla.

  3. Add chopped veggies atop hummus.

  4. Carefully and tightly roll up (fold one end in if you will be eating it as a wrap- if you are chopping it into bite sized pieces, no need to fold in).

Other ideas for toppings

  • Fresh herbs (parsley, dill, cilantro..)
  • Chopped carrots
  • Chopped green onions
  • Chopped red onions
  • Chopped broccoli or cauliflower
  • Avocado
  • Goat cheese (for non-vegans)
  • Hot sauce/siracha 

The possibilities are endless! Fill with your favorite flavor combinations and have fun with it!
