Juicy Pineapple & Coconut Smoothie

Ahhh- this Juicy Pineapple & Coconut Smoothie is so refreshing. I am totally a summer girl. Not sure about you, but I love being outdoors. I love hanging out by the pool, drinking large (and I mean large!) cold smoothies, and yes- I even like sweating! Talk to my sister and she is the exact opposite! It’s funny how that happens, right?! I mean we both grew up in the same place (Texas- hello heat!) and experienced the same weather but hold two totally different viewpoints!

Seriously, you MAY have to deal with some complaining on my end when winter comes. I hate to admit that complaining is one of my cold weather coping mechanisms. Until then, I am going to continue to relish in the summer sunshine and enjoy this Juicy Pineapple & Coconut Smoothie!

I had to add the word “juicy” in the title because I mean “Wow, that pineapple isn’t juicy at all” said no one ever.

Every time I cut into a pineapple, the juiciness is everything. I really think they have the perfect combination of tangy/sourness with the subtle sweet after taste that of course makes you keep wanting more. More juicy pineapple please!!

The Recipe

So if you are a summer person like myself, you will totally love this smoothie out by the pool embracing the sunshine! And if you are not a summer person, this smoothie will help you through the heat! it’s a win win situation.

Not to mention, the pineapples in this smoothie are accompanied by sweet, hydrating coconut water and nourishing spinach. I mean really?! What’s not to love about this smoothie?!

A delicious, hydrating green smoothie! Will provide you with energy, nourishment, and satisfy your sweet tooth! 

Course: Breakfast, Main Course, Smoothies
Servings: 1
  • 1 cup fresh or frozen pineapple chunks
  • 1 frozen banana *OR add 1 extra cup pineapple
  • 1 large handful spinach leaves
  • 1 cup plain coconut water *More or less depending on desired consistency
  • 1 handful ice *Optional
  1. Blend all ingredients in a high speed blender. Add more of any ingredient to reach desired taste. Enjoy! 

Recipe Notes
  • You can replace banana with any other fruit!
  •  Add canned coconut milk for an even creamier texture!
  • Double the recipe for an extra large smoothie- to share or not to share- up to you! #noshame
