Oh hello there little chewy, sweet, peanut-buttery oat-filled carob chip cookies! These little treats are my new favorite- and I bet they will be for you too! Just take 15 minutes to make these and you’ve got a warm, delicious, Vegan cookie that is healthy and satisfying!
What are “carob chips” you ask?! Carob chips are very similar to chocolate chips, except they are made from the “Carob” plant. Carob chips do not contain caffeine (again, these cookies make a great dessert after dinner!) and they are naturally sweet, meaning they will have less sugar added to them. To me, carob chips are a lot softer and melt easier than chocolate chips. I have never found carob chips that aren’t vegan, however, when you buy them (at most health food stores) double check the ingredients! These Peanut Butter & Oat Carob Chip Cookies go great with a glass of creamy cashew milk (or any other milk alternative) and can be enjoyed as breakfast, snacks, or dessert! Or all 3- cookies, cookies, cookies- sounds perfect, right?
Did I mention I am officially 30 weeks pregnant?! That may be why some of my latest blog posts (blackstrap molasses cookies, chewy date cookies, and these peanut butter & oat carob chip cookies) have all been cookies 🙂 . No shame in the indulgence game here! Cookies and smoothies have been my sweet treats throughout pregnancy!
I really haven’t had any odd cravings like “pickles and ice cream”. But I have been enjoying fruit, smoothies, large salads, dates, and peanut butter as much as I want and I have felt great! Read more on my recent post about my 2nd trimester.
Anyways, I think I am going to make a big batch of these cookies and keep them in the freezer for when I am breast-feeding! Word on the street is that oats are great for breastmilk production.

I’m sure the first thing you want to see is this delicious recipe! Well, wait no further my friends. This recipe is a Vegan High Net food- meaning you will get a lot of energy out of it rather than spending a lot of energy digesting it. Which makes it perfect for breakfast, snacks, pre/post workout, or even dessert! It can easily be made Gluten-Free by using gluten-free oats.
An energizing treat that can be enjoyed as breakfast, snacks, pre/post workout, or dessert! Also great for breast-feeding mothers.
- 1 cup natural peanut butter *I used Earth Fare brand
- 1/4 cup coconut sugar
- 1 1/2 tsp pure vanilla extract
- 2 flax eggs *1 flax egg = 1 tbsp ground flax + 2 tbsp water mixed well
- 2/3 cup rolled oats *I used Bob's Red Mill- use gluten-free if desired
- 1 tsp baking soda
- 1/4 cup carob chips
Preheat oven to 350F.
Mix flax eggs in a small bowl and set aside.
In a separate small bowl, mix together oats and baking soda. Set aside.
In a large bowl, mix together peanut butter, coconut sugar, flax eggs, & vanilla until well mixed and smooth. *Take a bite if you dare- it's so good!
Mix in oats and carob chips.
Roll into balls about the size of a golf ball (or bigger if desired) and place on a baking tray. Gently press down on cookies to flatten just a bit.
Bake for 8 minutes and let cool. Enjoy!
*Use gluten-free oats if desired
*These cookies can be kept in an air-tight container for about 1.5 weeks, or longer if kept frozen.
