The Truth About Cookie Dough
When I was younger, I used to beg my mom to make oatmeal cookies. Like all the time. If you read in my double chocolate brownie cookie post, you know that I didn’t eat chocolate as a kid. So while I did have my mom make “chocolate chip cookies without the chocolate chips”.. oatmeal cookies were my favorite (okay big tie between oatmeal and iced sugar cookies)!
However, I looooved the cookie dough and always made her keep an extra bowl in the fridge that isn’t cooked. She would warn me about the raw eggs but I didn’t care. It was too good. Probably because they also had peanut butter in them and it was foreshadowing my future love of peanut butter.
I did get stomach aches from that cookie dough… and I don’t think it was just from the raw eggs, but because I may have eaten a BIT too much! Too much raw eggs, sugar, and flour. But it was soooooo good.
I am happy to say that 20 years later I have found the solution to my problem of wanting to eat bunches of oatmeal cookie dough. Enter in the latest recipe: Peanut Butter Oatmeal Cookie Dough! This is not regular cookie dough though, it is made to eat as dough! And of course, it is 100% Gluten-Free, Vegan, & Natural. Meaning that you likely won’t have a stomach ache after eating it either! Why could I have not found this 20 years ago?!
Another question- WHY AM I EATING SO MUCH COOKIES?! If you check this blog- I have never posted a cookie recipe until I got pregnant. I guess I never really baked before either, unless I was cooking squash. But now that I am pregnant, letting myself eat more fruit, and treating myself every now and then, cookies have been my go-to treat. I’m guessing because they are easy and we are cheap and have not bought a brownie or muffin pan yet 😛
I really think the return of my sweet tooth has made me a better person. It’s true. I’m happier (because they just taste so good!) and like to share my cookies with others! And it is likely preparing me for parenthood so I can feed my kiddo healthy, nutritious cookies, and cookie dough, that doesn’t spike his blood sugar or give him stomach aches! For that, I will gladly continue on my cookie streak, and maybe even buy a brownie pan 🙂
A Versatile Recipe
Anyways, you can enjoy this cookie dough in any fashion.
- By itself
- Atop or mixed in to Vegan ice cream or banana ice cream
- Atop coconut yogurt
- Baked a bit with some fruit
- Rolled into cookie dough balls & frozen
the possibilities are endless! You really also can bake it into cookies if you want. Add some baking soda and maybe a flax egg and you are good to go! Although you could probably also just check out this recipe!
With ingredients of gluten-free oats, natural peanut butter, coconut sugar, and vanilla extract it is healthy enough to enjoy anytime of day! My favorite times are:
- Post-workout- by itself or with banana ice cream
- Random little bites throughout the day
What is your favorite way to eat cookie dough?!
For those who love the dough more than the cookie- Vegan, Gluten-Free cookie dough that you can safely eat without cooking!
- 2/3 cup Natural Peanut Butter *Use any nut butter/tahini/sunbutter of choice!
- 1/3 cup Gluten-Free Oats *I used Bob's Red Mill
- 1/4 cup Coconut Sugar *Use less if watching sugar- will still taste great
- 1 tsp vanilla extract
- 1 small handful Vegan Chocolate Chips *Optional
Mix all ingredients into a bowl. Freeze for 45 min or place in fridge for 1.5 hours.
Remove and enjoy!! Store in fridge unless you want to keep it longer, or you are making freezer dough balls.
*You can cook this and they will make peanut buttery cookies! I suggest adding 1 tsp baking soda and baking at 350F for 6-8 minutes.
