4th of July Workout
4th of July weekend (or any holiday in that matter) always requires special things: special holiday recipes and workouts are what I gravitate to. Speaking of- make sure to check out this awesome 4th of July Workout I posted a couple years ago- it’s a good one! If you are pregnant, like myself, you may enjoy one of these workouts instead. And of course, we should all enjoy a Mango Mint Sorbet post-workout!
Summer Poolside Remedy
Does the name Quick & Easy Mango Mint Sorbet not make you want to whip this up and enjoy a poolside holiday?!
This idea for this Quick & Easy Mango Mint Sorbet came from my husband’s latest obsession- our herb garden. I have to say, he has way more patience than I do in tending for our tomato, pepper (2 kinds) mint, basil, cilantro, rosemary, dill & chive plants! (Yes- these are all on our apartment balcony! )
The herbs have grown so much, especially the mint! Although we put mint in our fruit infused waters every morning, we have been thinking of other ways to use it. I did try this Sprint Minestrone Soup (without the cheese) which I 100% recommend- it was delicious!
But of course my mind went straight to, “What kind of fruity frozen goodness can I make with mint?!” Yes- Mojito’s were actually the first thing I thought of- but being pregnant and not the biggest fan of fruity mixed drinks anyways- that may have to be another ice cream flavor coming up. But once I thought of Mango Mint Sorbet I was sold. There’s something about mango and mint together that really makes my mouth water! Not to mention the 5lb bag of frozen mango’s I had in the freezer 🙂 win-win if you ask me!
A perfect, refreshing, and healthy summer recipe!
- 2 cups frozen mango chunks
- 1 frozen banana *OR extra 1/2 cup mango
- 1 handful fresh mint leaves
- 2 tbsp almond/coconut milk *Add more as needed
Add all ingredients to a high speed blender or food processor. Blend until smooth- adding more almond milk if necessary to reach desired consistency. Enjoy in the sunshine!
- Use canned coconut milk instead of almond milk if you want it extra creamy!
- Add berries or other frozen fruits to make your own flavors.
