What I Ate Today

Hello, hello! I’m thinking of doing a new series called “What I ate today” … or something along those lines. I always enjoy seeing other people’s posts about this. I find that it gives ideas and inspiration towards meals that I would never have tried. So I’m hoping this will do the same for whoever reads it! Please comment below if you like this post and would like to see more!

Wake up: Water

I have a new habit that I love. Well, I don’t really love it right now. Waking up and drinking 1/2 liter of water before you have coffee isn’t the most desirable thing when you have been up all throughout the night with a hungry newborn baby. There is one thing that gets me out of bed in the mornings (besides the hungry baby): COFFEE. and lots of it! However, first, I must chug down this water that I hate but that I would love if I had it after my coffee. But lets face it, I wouldn’t drink 1/2 liter of water every single day in the morning if I had the option of drinking it after my coffee. I just wouldn’t! I would move on to bigger and better things because of all of my renewed energy thanks to my morning cup of joe.

9am: Coffee & Fruit

I know what you’re thinking: “You don’t get up until 9am?! Why are you dying for coffee when you get to sleep in that late?!” Okay…. normally I get up around 7am but the hubs is out of town right now and it was a rainy morning so the babes and I had some extra snuggle time. So this morning, we started our day around 9am.

Normally I like to eat 1/2 melon in the mornings. I am too tired (or too busy with baby) to start the blender for my smoothie. I like to let my body wake up a bit and not feel so rushed first thing in the morning. Watermelon and cantaloupe are my favorite melons, but if I don’t have that then I will just cut up some fruit.

10:30am Green Smoothie

I love green smoothies in the morning! To me, I feel like I have my cake and eat it too. Blended frozen bananas are so creamy and ice-cream like, and you can’t even taste the spinach! I like to keep it nice and simple and normally just use bananas and greens. This smoothie is made with frozen bananas, spinach, & almond milk, but another favorite is frozen bananas, kale, 1/4 seeded cucumber, and water or almond milk.

 

12:30pm Chickpea Salad

As you can see, I eat quite often throughout the day. That is just how it is right now. Sometimes I try to do a big breakfast, lunch, and dinner. However, right now eating every so often seems to work for me. I really just eat any chance I get because I don’t want to let myself become starved and eat things I’ll regret, and I want to make sure that I am fed so that I have paitence with the little bambino. I mean seriously, who wants to be hangry with their 7 week old?!

I really love eating Raw Til 4. Where I eat raw, not cooked, plant-based foods until the afternoon. However, it is rare that that really happens. But it helps me to choose the best possible foods! When I can’t eat Raw til 4, I try to make sure that I follow the rule: Plant over processed, in which I will choose a plant food before anything processed.

This lunch consists of a bed of chopped romaine combined with mixed greens. I love adding romaine to my salads to make it crunchy! Atop the greens are chopped cucumbers, red pepper, tomatoes, purple sweet potato, and chickpeas. Topped with dill and sunflower seeds. The dressing is a scoop of tahini mixed with 1/2 lime juice and a tsp of apple cider vinegar. This salad is seriously delicious!

2:30pm Snack of fruit

I love to snack on fruit! It instantly satisfies me. Today I had a big container of chopped pineapple!

3:30pm Pre-Workout Fuel

Don’t even get me started on my love for dates. Oh my they are good! Yes, dates have a lot of sugar, but when you consume natural sugar from fruit, especially dates it is used for healthy energy! Today I was running errands and stopped at the park for a jog on my way home so these dates were the perfect pre-workout snack! I love to have dates or an apple in my purse/diaper bag so that wherever I am (work, errands, out and about) I have something that will tide me over if I get hungry!

5:00pm Post Workout Re-Fuel

So you can see that I eat a lot of fruit! And you might be wondering why this fruit looks interesting. It is frozen! I love to get a huge bag of frozen mango chunks and a bag of frozen cherries from our bulk grocery store (BJ’s). I love eating them plain. I love it so much that I don’t put mangos in my smoothie anymore, because it just doesn’t taste as good as it does plain! I will just take the huge bag out of the fridge and eat the chunks like I would eat chips :). So post-workout snack is usually some delicious frozen fruit! Mango and cherries to be exact!

8:30pm Dinner

Wow, thank God for healthy packaged food! Adam is currently out of town and I would rather not cook dinner since there could be a hungry, fussy, needy baby at any moment. That just seems like frustration to me. Luckily my friend told me this delicious soup hack from Trader Joe’s. Butternut squash soup with frozen Melodious Blend. What is Melodious Blend you ask?! It is green garbanzo beans, red and green lentils, and a touch of tomatoes and olive oil. Just dump both into a large pot on the stove and you have a delicious dinner in 5 minutes! I also added some frozen plain broccoli and cauliflower- can’t forget the veggies!

9:00pm: Sweet Treat

Sometimes I eat dessert, sometimes I don’t. If I find myself not feeling satisfied after dinner then I’ll eat a square of this delicious dark chocolate, 1/2 peanut butter wrap, or peanut butter with dates. I typically go for something with peanut butter or chocolate because it’s satisfying! And I know that I need extra calories right now with breastfeeding.

Middle of the night snacks

This cutie still likes to wake up 1-2 times throughout the night and eat. Sometimes I find myself hungry too! I really hate eating in the middle of the night because I do not like brushing my teeth again! However, if I feel like it will help me get back to sleep more quickly, I’ll eat one.

My middle of the night snacks consist of a peanut butter wrap, peanut butter and dates, a banana or hummus. These typically do the trick very well and I’ll find myself in dreamland in no time.

Well, that about wraps up what I ate today! I hope you guys enjoyed it, because I really enjoy taking pictures of my food and writing about it (weird, I know!). Let me know if this is helpful to you and I will keep doing them!
